Smoked Salmon Blinis & Champagne

The other weekend I made (and ate) smoked salmon blinis for the first time, and am now convinced they’re the perfect appetizer! My friend Meg taught how to make these little bite-size party treats – all you need is a bit of smoked salmon, tangy crème fraiche and punchy lemon. Here’s the simple recipe: take two dozen or so pre-made blinis and place them on a serving platter (you can buy these at the market or make them from scratch). Spoon a dollop of crème fraiche on each blini, and then top with a small piece of folded smoked salmon. Squeeze a bit of fresh lemon over the blinis, sprinkle a pinch of salt and pepper, and top with a sprig of dill or chives.  

These are definitely best served with champagne, so break out the bubbly and enjoy!
